Raspberry-Mango Jam
This jam brings together the bold tartness of raspberries, and the tropical sweetness of mangoes for a vibrant spread. The fruit combination creates a stunning pink colour, and offers a rich source of vitamins, antioxidants, and natural fibres.

| frozen mango | 500g |
| gelling sugar | 800g |
| lemon juice | 30g |

In a large pot, combine the frozen raspberries, mango, gelling sugar, and lemon juice. Let sit for 10 minutes to allow the sugar to dissolve slightly.

Bring to a boil, and cook for 4-5 min while stirring.

Blend to your preferred consistency.

Remove from the heat and pour into sterilized jars.

Seal tightly and turn upside down for 5 minutes to create a vacuum seal, and let cool completely.
