Frozen grapefruit caramelised in sugar and brown butter, combined with creamy coconut yoghurt. Delicious as breakfast or as a late-afternoon snack.

coconut yoghurt 125g
granola 50g
nuts and seeds
raisins and dried cranberries

Frozen grapefruit caramelised in sugar and brown butter, combined with creamy coconut yoghurt. Delicious as breakfast or as a late-afternoon snack.

  1. Heat the butter over medium heat in a non-stick pan.

  2. Add the brown sugar to the pan and stir until it forms a caramel-like sauce. 

  3. Add the frozen grapefruit to the pan, and cook for 5 min, until it is caramelised and golden brown on the edges.

  4. Add the yoghurt and the grapefruit to a bowl, and decorate with granola, nuts, seeds, raisins, and dried cranberries.
