  1. In a large pot, combine the frozen cherries, gelling sugar, and lemon juice. Let sit for 10 minutes to allow the sugar to dissolve slightly.

  2. Bring to a boil, add the ginger, and cook for 4-5 min while stirring.

  3. Blend to your preferred consistency.

  4. Remove from the heat and pour into sterilized jars.

  5. Seal tightly and turn upside down for 5 minutes to create a vacuum seal, and let cool completely.
