  1. Allow the frozen orange and edamame to thaw.

  2. Cook the quinoa and crumble the feta.

  3. Chop up the kale, spring onion, parsley, and mint.

  4. Add everything to a large bowl and add the olive oil and apple cider vinegar. 

  5. Season with salt and pepper.
