A refreshing dessert, crafted with frozen melon puree and infused with a hint of gin, and perfected with a silky texture through careful emulsification and freezing.

  1. Bring the glucose syrup and water to a boil.

  2. Add the frozen melon puree to cool down the mixture. 

  3. Use a hand blender to emulsify.

  4. Add the gin.

  5. Pour into an ice cream machine.

  6. Pour into a tub and freeze overnight.
