Grilled aubergine with passion fruit yoghurt
This grilled aubergine side dish brings together smoky with refreshing. The passion fruit brings a bright touch that cuts through the richness of the other flavours, while crushed pistachios bring just the right amount of crunch.

| Greek yoghurt | 200 g |
| frozen passion fruit cubes | 6 |
| pistachios | QS |

Slice the aubergines into thin slices, brush with olive oil, and season with salt and pepper. Grill on 200°C for 10 minutes or until golden brown and crispy.

Defrost the passion fruit cubes. Add the grilled aubergine to a plate and add the yoghurt on the side. Add the passion fruit on top and finish with crushed pistachios.
