This grilled aubergine side dish brings together smoky with refreshing. The passion fruit brings a bright touch that cuts through the richness of the other flavours, while crushed pistachios bring just the right amount of crunch.

  1. Slice the aubergines into thin slices, brush with olive oil, and season with salt and pepper. Grill on 200°C for 10 minutes or until golden brown and crispy.

  2. Defrost the passion fruit cubes. Add the grilled aubergine to a plate and add the yoghurt on the side. Add the passion fruit on top and finish with crushed pistachios.
